Nothing Naughty Coconut Rocky Road

 

This delectable ‘nothing naughty coconut rocky road’ is a perfect low sugar sweet treat that will nip any cravings straight in the bud! So you can still indulge in a little REAL chocolate, without the guilt!
  • Rich in antioxidants and magnesium
  • Dairy & gluten free
  • Low in sugar – just 5 gms per 20 gm serve
  • High in natural plant proteins – thanks to the raw nuts and seeds
  • Rich in good fats thanks to the virgin coconut oil

What you’ll need…

  •  80 grams cocoa butter
  • 1/2 cup virgin coconut oil
  • 1/2 cup quality cacao powder
  • 2 Tbsps rice malt syrup
  • 1/2 cup organic frozen raspberries
  • 2-3 fresh dates, roughly chopped – optional – personally I don’t add these, especially if you are trying to kick sugar
  • 1/3 cup goji berries
  • 1 cup toasted coconut flakes
  • 2 cups raw mixed nuts – brazil, almonds, macadamias, walnuts, pistachios – preferably organic or pesticide free
  • 1/2 – 3/4 cup pumpkin seeds
  • 1 tsp mixed spice, cinnamon  or nutmeg

How to make…

  • Melt cacao powder, cocoa butter, coconut oil and rice malt syrup over low heat in a small saucepan, stirring to combine
  • Add mixed nuts, dried figs / dates (if using), goji berries and toasted coconut flakes to a large bowl and stir with a wooden spoon to combine
  • Lightly grease a rectangle cake tin with coconut oil and line with greaseproof paper
  • Add dry nut mix to the tin and spread evenly then top with the frozen raspberries
  • Pour melted ingredients over nut mix to coat evenly
  • Place in fridge to set and then remove when hard and cut into small squares or fingers approx 5 x 3cm
  • Store in an airtight container in the fridge.

Enjoy a slice of coconut rocky road with a cup of fresh herbal tea  – eg: green tea, fresh ginger & lemon grass, peppermint or chai made on almond or coconut milk….yum!

    fresh dates should be eaten in moderation as they are quite high in the naturally occuring sugar – fructose, so I would not recommend more than 1-2 per day – even less if you are trying to lose weight, even better eat them in conjunction with good fat or protein – such as those found in my recipe in the form of the unrefined coconut oil and cocoa butter in the chocolate. The GI factor – or insulin producing factor of the dates will also decrease when you eat high GI carbohydrates with protein or fat – a good thing 🙂

    Choose low sugar fruits to snack on – such as berries, or actiavted raw nuts, but a small piece of my nothing naughty coconut rocky road wont do any harm!

    Looks really yummy!

    I love dates and love to snack on them every day but Im just curious how much one should consume a day? Is the sugar in dates bad for you?
