Fresh Fig & Toasted Walnut Salad

Right now is a great time to incorporate fresh figs into your diet, not only because they are in season and taste divine, but because they are a very alkaline fruit, perfect for keeping your health in check! I use goats feta in this salad as a low allergenic alternative to cows cheese and the toasted walnuts make add delicious nutty crunch. Drizzle with my nothing naughty salad dressing and hey presto – you have a tasty summer salad that ticks all the nutrition boxes.

This salad makes a perfect addition to any choice of protein, including organic chicken, lamb, or fish.  So make the most of the fresh fig season, and impress your family and friends with this 5 minute salad!

Nutritional Benefits

  • Alkaline – thanks to the salad greens and fresh figs
  • Olive oil dressing is a source of ‘good’ fat, –  great for heart health and no it won’t go to your hips!
  • Walnuts are great for brain function

What you’ll need…

  • Mixed lettuce and rocket leaves – use around a handful per person
  • 2 – 3 fresh figs, quartered
  • 1 – 2 Tbsp goats feta
  • 1 medium Lebanese cucumber – depending on how many serves you need
  • 1/4 cup walnuts, toasted

Dressing ingredients

  • 1/4 cup of olive oil ( you can use more – depending on how many serves you need) – I recommend using Australian olive oil
  • Juice of half a fresh lemon and or 2 tsps of apple cider vinegar
  • 1 tsp whole grain mustard
  • Cracked pepper to taste
  • 1 tsp rice malt syrup

How to make…

  • Take a large platter or plate – depending on how many mouths you are feeding and arrange the washed mixed lettuce and rocket leaves on it,
  • Thinly slice the Lebanese cucumber and arrange over lettuce and rocket
  • Top with fresh figs, cut in quarters, and crumbled goats feta
  • Roast the walnuts in a little rice bran oil in a small fry pan or place under the grill (you can of course use raw walnuts) until just golden brown, be careful not to burn them! Arrange over the salad

To make the dressing

  • Add all ingredients to a glass jar
  • Replace the lid and shake vigorously to mix.
  • Pour over salad when ready to serve
