Herb and Yoghurt Dressing

Gluten Free, Cow’s Dairy Free, Fructose Free, Diabetic Friendly, Paleo friendly, Low Carb

In keeping with my healthy fat is good for you’ theme, I created this scrummy salad dressing  that’s tastes delicious over any salad or even chicken and of course it only makes minutes to make!  This dressing contains 3 sources of healthy fat  – thanks to the tahini, sheep’s yoghurt and extra virgin olive oil. If you add avocado to your salad  there’s another source!  Don’t be afraid people, embrace good fat and watch your hips and thighs shrink!

What you’ll need… 

  • 1 Tbsp. plain sheep’s yoghurt
  • 1/2 cup Extra virgin olive
  • 1 desert spoon of tahini
  • 1/4 cup fresh mint leaves
  • 1/4 cup flat leaf parsley ( I also like to add some coriander as well)
  • 1 desert spoon of sesame seeds
  • 1 tsp of rice malt syrup / Natvia ( stevia sweetener) or xylitol
  • Juice of a fresh lemon

How to make… 

  • Place all ingredients in a blender or use a handheld stick blender and blend until smooth and creamy.  Add more olive oil if you prefer a runnier consistency.
