EYH MEMBER RECIPE:  Cauliflower Mash

Gluten Free, Cow’s Dairy Free, Fructose Free, Diabetic Friendly, Paleo friendly, Low Carb

If you love your mashed potato but don’t love the extra pounds it can add to your hips and thighs, then cauliflower mash is the perfect low carb alternative! Add to any dish you like to eat mashed potato with or as low carb topping to my shepherd’s pie recipe, you will barely know the difference! Kids will love this dish too!

What you’ll need… 

  • 1 head of cauliflower, trimmed and cut into florets
  • 1 cube butter – 25 grams
  • ¼ cup extra virgin olive oil
  • 1 clove garlic (optional)
  • ½ tsp nutmeg (optional)
  • ½ tsp Celtic sea salt
  • Cracked black pepper to taste

How to make… 

  • Steam cauliflower florets until just tender then drain and add cauliflower with all other ingredients to a food processor and pulse until creamy. Alternatively you can use a potato masher. Add as a side to any dish in place of mashed potato.  See my recipe for shepherd’s pie or cauliflower rice vegetable stir fry
