Chocolate Beetroot Brownies



Let’s face it, everyone loves a brownie, but most are packed with sugar and gluten, so I have developed a recipe that is not only free of all the inflammatory gut bloating nasties, but also contains super foods to boot, thanks to the raw cacao, coconut oil, pumpkin seeds and the goodness of beetroot. So there really is nothing naughty in this treat! Enjoy for an afternoon treat with a cup of fresh herbal tea.


What you’ll need…

½ cup almond meal

¾ cup raw beetroot, finely grated

1/2 cup virgin coconut or macadamia oil

2 eggs, lightly beaten

½ cup rice malt syrup

½ cup roughly chopped hazel or walnuts (optional)

½ cup raw cacao powder

1 Tbsp. pepita seeds

1 tsp. natural vanilla essence or powder

½ tsp. cinnamon, ground

¼ tsp baking gluten free powder


How to make…

Preheat oven to 180C 350F. Add all ingredients to a large mixing bowl and use a spatula or wooden spoon to combine mix well.   Pour mix into a small slice tray, lined with baking paper. Place in oven for 25 – 30minutes. Use a skewer to test if mix has cooked through – it should come out clean. Allow to cool before cutting into small portions – around 4cm x 4cm each.

Serving size – 1 -2


Sally’s Tip…

These little morsels of joy are very moreish! So remember all my nothing naughty treats are meant to be enjoyed as just that – treats! Serve with a cup of fresh herbal tea and if you are struggling with sugar cravings, then I recommend waiting until after week 3 to try this recipe.
