Gluten Free, Cow’s Dairy Free, Fructose Free, Diabetic Friendly, Paleo friendly, Low Carb
Lets face it, everyone loves a brownie and this recipe incorporates plenty of super foods from raw cacao, virgin coconut oil, goji berries and pumpkin seeds, so this ‘Nothing Naughty Treat’ can be enjoyed with a lot less guilt and sugar than your traditional brownie. And of course they contain no gluten free, cow’s dairy or fructose.
What you’ll need…
- ½ cup coconut or rice flour
- ½ cup almond meal
- ¾ cup raw beetroot, grated
- ¾ cup virgin coconut oil
- 1 egg lightly beaten
- ½ cup xylitol or rice malt syrup
- ½ cup hazel nuts (optional)
- ½ cup raw cacao powder
- 1 Tbsp. pumpkin seeds
- 1 Tbsp. sunflower seeds
- 1 Tbsp. goji berries
- 1 tsp vanilla
- ½ Tsp cinnamon
- ¼ tsp baking gluten free powder
How to make…
- Preheat oven to 180C. Add all ingredients to a large mixing bowl and use a wooden spoon to combine well. Press the mix into a small slice tray lined with baking paper. Place in oven for 25 – 30minutes. Use a skewer to test if they are cooked if it comes out clean, the brownies are ready! Allow to cool before cutting into small portions – around 4cm x 4cm maximum.
Makes around 20 portions
Sally’s Tip…
Because these little morsels are so Moorish, I recommend freezing a portion of the batch if you can’t trust yourself to not over indulge! Even though they are low sugar and contain lots of healthy ingredients, all my nothing naughty treats need to be just that – a treat! Serve with a cup of fresh herbal tea
