Ingredients…
- Blanched green beans, topped and tailed
- 6- 8 cherry or grape tomatoes, halved
- Approximately 100 – 120 grams of tinned tuna (can use fresh tuna fillet if preferred)
- 2 tbs of loosely chopped flat leaf parsley
- ¼ cup pitted black olives
- Juice of ½ half a fresh lemon
- 2 – 3 tbs Cobram Estate Olive oil
- Ground salt and pepper to taste
Method…
- Add blanched green beans, cherry tomatoes, tuna pieces, parsley and black olives to a medium sized mixing bowl.
- Toss ingredients through with olive oil and lemon juice and season with salt and pepper to taste.
- Serve on a plate or salad bowl and garnish with chopped fresh parsley.
