EYH MEMBER RECIPE: Flourless Orange & Chia seed cake

Gluten Free, Cow’s Dairy Free, Fructose Free, Diabetic Friendly, Paleo friendly, Low Carb

Probably the most indulgent of my ‘Nothing Naughty Treats’!  But for those moments that call for a cake – this recipe will keep you out of trouble  – thanks to being gluten and cow’s dairy free and fructose free.  However as the aim of the Eat Yourself Healthy Program is to wean you off sugar amongst other nasty’s, I recommend you save this recipe for an extra special treat after week three or beyond when your sugar cravings are more likely to be under control.  The chia seeds are a great source of fibre, so enjoy the indulgence of this not so naughty cake.

What you’ll need… 

For the cake

  • 2 oranges, tops removed, cut and scored with a cross about 3 cm deep
  • 3 organic eggs
  • 1 cup  xylitol
  • 3 cups almond meal
  • 1 teaspoon gluten free baking powder
  • 2 tablespoons soaked chia seeds

For the Syrup

  • 1 orange
  • ¾ cup xylitol

How to make… 

  • Grease a spring form round tin and line with grease proof paper and preheat the oven to 170C.
  • Place the oranges in cold water and boil for 15 minutes on medium heat
  • Pour out water and cover with cold water to reduce the bitterness.
  • Bring to the boil and cook for 45 minutes
  • Refresh under cold water again
  • Chop up oranges in quarters and place in a food processor until smooth
  • Beat the eggs and xylitol in a food processor until thick and pale
  • Add the baking powder, chia seeds and almond meal to the orange mix.
  • Pour mix into the grease proof paper lined tin and bake for 1 hour until just done.
  • Set aside for 15 minutes
  • Zest the third orange and then juice it and add the zest and fresh juice with the xylitol to a small saucepan and cook on low heat until the xylitol is dissolved and the syrup thickens.
  • Place the cake on a serving dish and make a few prick holes with and pour the syrup over the top.

Sally’s Tip… 

Best served while warm with a dollop of plain sheep or coconut yoghurt.
